Bill Fredericks

A Master Craftsman

Bill Fredericks is the Chocolate Man and the chocolatier for Choc Élan. Bill is a trained Master Chocolatier and has been educating and consulting on all things chocolate for three decades. Bill owns the Chocolate Man store in Lake Forest Park and creates premium chocolate confections every day.

Ganache

When you bite into a chocolate truffle, what’s inside is called ganache. Ganache is a silky blend of couverture chocolate, cream and infused flavors that Choc Élan believes is best celebrated out of its shell and spread on your favorite small bite. Made fresh, you choose your favorite ganache – sweet, spicy or something completely different!

Choc Élan uses couverture (premium quality with added cocoa butter) chocolates from manufacturers around the globe. Our cakes, pastries and small bites are baked on-site, our dipping chocolates are tempered and ganaches handmade every day to ensure freshness. Chocolate Man creates our fresh artisan truffles in their commissary kitchen.
